What’s the best way to store purified Ice
In an ideal world, we'd all have commercial freezers with automatic defrost cycles running several times a day. But, if you're like us, that's probably not the case. The best approach is to store your ice as flat as possible in your freezer. You can lay the cubes down and stack them on top of each other. We use 4 Mil poly bags to slow down the frosting process, but eventually, some frost may still form. Don't worry—this doesn't affect the purity of the ice.
HOW CAN I SEPARATE ICE THAT’S STUCK TOGETHER?
Do not hit them with a blade or drop them onto a surface. This will cause the cubes to crack.
The best method is to try to find a crease between the cubes and place the blade of a knife in between the crease. Use very light pressure and the cubes should separate with ease.
WHY DOES MY ICE CRACK WHEN I ADD LIQUID?
We highly recommend placing the cube in the glass while you prepare your cocktail or grabbing your favorite spirit.
If you are pouring a chilled cocktail over the cube, it will not need as much time to temper. Typically 1 minute.
If you are pouring a room temperature spirit directly over the cube, it will need more time to temper. Typically 2-3 minutes.
*If cubes are very frosted, we recommend letting them temper even longer.
